This is another one of my sister's recipes. Since she lives where there is an abundance of peaches every year she developed this recipe. This is wonderful warm or at room temperature. It also freezes very nicely, so you can put some away for cold winter days and you can pull one out of the freezer to defrost.
Ingredients
- 2 cups peaches (peeled & diced)
- 1 cup oil
- 2 cups sugar
- 3 eggs
- 1 tsp poppy seeds (optional)
- 1 tsp salt
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1 tsp cinnamon
- 2 tsp vanilla
- 3 cups flour
- 1/4 cup chopped pecans
- 1 cup raisins
Method
- Mix and pour into greased loaf pans.

Bake at 350 for about 40 minutes, or until top starts to crack a little, or toothpick comes out clean.
This makes about 5 small loaves.
