Ozark Pumpkin Bread

A recipe for your Halloween/Harvest table. It's a family recipe from my good friend (a wonderful editor and author), Jane Rumph.

Ingredients:

1/3 C. shortening
¼ tsp. baking powder
1 1/3 C. sugar
1 tsp. Soda
½ tsp. Vanilla
1/8 tsp. Salt
2 Eggs
½ tsp. Cinnamon
1 C. Pumpkin
½ tsp. Nutmeg
1/3 C. Sherry
½ C. Chopped nuts
1 2/3 C. Sifted flour

Preparation:

First cream together shortening, sugar, and vanilla: add eggs, one at a time, beat well after each addition. Stir in pumpkin. Sift together flour, baking powder, soda, salt, cinnamon, and nutmeg. Add flour mixture to pumpkin mixture alternately with sherry and blend well. Stir in nuts. Turn into well-greased 9x5 inch loaf pan and bake at 350°F for one hour or until tests done. Turn out to cool. Wrap and refrigerate until ready to slice. Makes one loaf.
