Herb Bread with Ricotta Cheese

A light bread good for summer fare easy to prepare.

I have baked bread for years and my collection is extensive. When preparing dough you are in control and prepare healthful ingredients for your family. Oat bread, Alpine bread, wheat berry and so on. We like this herb bread with ricotta it is quite good with slices of ham or turkey.

Ingredients

  • 1 package active dry yeast 1 cup whole milk ricotta
  • ¼ cup warm water ¼ cup fresh herb of your choice Dill or basil chopped
  • 1-tablespoon olive oil
  • 1 teaspoon sugar 1 egg
  • 2 and ¼ to 2 and ¾ cups of unbleached flour
  • I do not use salt but if you wish to do so you may add it. 1 teaspoon

Method

In a mixing bowl dissolves yeast in warm water. Heat ricotta to warm. Add to y east mixture. Add the herb, olive oil sugar egg and l cup flour. Beat well. Stir in enough remaining flour to form soft dough. Do not knead Cover and let rise in a warm place for 1 hour. Punch down turn out on a floured surface. Shape to a round to fit a 9-inch baking pan. Cover with plastic wrap keep warm until double in bulk about 45 minutes. Bake at 350 about 35 to 40 minutes. Cool completely before slicing. The flavor of this bread continues to improve, and remains fresh even the next day.
