Ham and Cheese Filled French Toast Sandwiches

I started making these sandwiches years ago during a camping trip. They are nutritious, easy and have become a family favorite.

Ingredients

  • 8 slices of crusty bread
  • 2 eggs
  • ½ tsp finely chopped fresh Basil
  • 1/4 tsp finely chopped fresh Oregano
  • 1/4 tsp finely chopped fresh Parsley
  • Salt and pepper
  • 1/4 cup milk
  • 250g Cream cheese
  • 4 slices Ham
  • 2 tsp butter or margarine

Method

    1. In a bowl whisk together eggs, milk, herbs and salt and pepper
    2. Spread all 8 bread slices with cream cheese
    3. Place ham slice on 4 bread slices and cover sandwich style with remaining 4 slices
    4. Dip sandwiches into egg mixture, making sure that sides are coated as well
    5. Cook in melted butter in a non-stick pan over medium heat for 3 minutes on each side

      * For crispier sandwiches, cook in a 400 degree oven on a butter-greased pan for 4-5 minutes each side.
