Fast and Furious Lobster Rolls with Creamy Dijon Sauce |

A quick and easy recipe for unexpected house guests. Serves four. 10 minutes cook time, 30 minutes prep. |
Ingredients- 1 ½ lbs of lobster meat
- 1/3 cup light mayonnaise
- 2 tbsp Dijon style mustard
- 1 tsp grated lemon peel
- 1 tbsp minced sweet onion
- 1/3 cup diced celery
- 1 tsp lemon juice
- ¼ teaspoon ground red pepper
- 4 hoagie rolls, split and toasted
Method- Finely chop the lobster meat.
- In large bowl, combine all of the ingredients and toss gently.
- Spoon the mixture over the hoagie rolls.
