Fish Finger and Peach Toasted Sandwich

Sometimes the oddest flavor combinations make a surprise treat.

Mixing the incongruous sometimes works. This is a quick bite that will not break the bank. The flavors may seem odd to read, but they are delicious to eat.

Ingredients:

  • Fish fingers, three per sandwich
  • Can of peaches, slices.
  • Sliced bread of your choice.
  • Splash of balsamic vinegar.
  • Ground black pepper.

Method:

  • Cook the fish fingers in a very small dollop of oil. Add the peaches at the end, just to brown them off. If you are going to make a few sandwiches, take the fish fingers out of the pan and keep them warm in the oven, then add the peaches so you don't make the fish fingers soggy.
  • Now either use your toasted sandwich maker, or fry the sandwich in the fry pan. Build your sandwich with a layer of fish fingers, topped with peaches and then splash a trickle of balsamic vinegar over the top of the peaches before adding the top slice of bread, sprinkle on some black pepper and hey presto! You just need to do the final cooking. Do not add too much vinegar as it can make the break soggy.

That's it. Simple food and something different.

Yes this combination seems odd but when I get brave enough, I'll give it a go.

I finally gave it a go and you are right, very nice and a little different. Easy too.
