Cheddar and Smoked Ham Biscuits with Fresh Herbs

This recipe makes 12 regular or 36 bite-size biscuits.

Ingredients

  • 2 1/2 cups all purpose flour
  • 1 1/4 tbsp Baking Powder
  • ½ salt
  • 1/3 cup butter or margarine (room temp)
  • 1 tbsp finely chopped Chives
  • 1 tbsp finely chopped Basil
  • 1 tbsp finely chopped Thyme
  • 1 cup buttermilk (regular milk is fine too)
  • 1/4 cup smoked ham cut in tiny pieces
  • 1 1/4 cup shredded Sharp cheddar cheese

Method

    1. Pre-heat oven to 400 degrees
    2. Combine flour, salt and baking powder in a large bowl. .
    3. Cut in butter with a fork until mixture looks like course crumbs
    4. Add remaining ingredients, reserving some of the cheese
    5. Stir in enough milk so that the mixture is soft and sticky
    6. Drop desired size spoonfuls onto a greased cookie sheet. .
    7. Sprinkle with reserved cheddar. .
    8. Bake on middle rack of pre-heated oven. Aprox. 18-20 min for large 7-8 min for mini or until edges are a light brown.

      Note: The mini version, cut in half and filled with cream cheese and a little smoked salmon, make great economical appetizers.

      I am going to have to make these just to see what comes out. When we talk about biscuits we mean cookies, and I've looked at the recipe and initially thought you might be talking about what we'd call scones, but these are dropped by the spoonful onto a cookie sheet, yet they're savoury. Sounds wonderful, so I'll try it.

      O.K. That's it! I have to make these which means there goes the diet. They will be great for next weeks Easter Dinner. Mom and Denis husband will be here so I can only imagine how fast they will disappear.

      I made two batches of these biscuits for Easter Dinner. I didn't add ham to the recipe because we were having a ham for dinner. I served them warm and guests loved them. My husband is asking when I am making more.
